Vintage: 2003 began in the Great Southern with what looked to be promising warm dry weather, leading to an average start to harvest with the early ripening varieties. However, rain in January caused the ripening of the later varieties to slow down somewhat, leading to lower sugar levels and reasonably high acid levels, making it the perfect conditions for Champagne.
Fortunately we got away with clean fruit once again and beautiful cool climate tropical flavours.

Bottling Date: Initial Tirage ( addition of yeast & sugar) was performed in September 2003; the wine was Disgorged on the 19th October 2004.
Winemakers Notes:
Colour: Rich Straw
Nose: After 12 months in bottle with the yeast lees, this wine has still retained a lot of the initial fruit on the nose, but with added complexity of lime and citrus.
Palate: A fine bubble, lovely full-length palate, with tropical fruit up front and a butterscotch creaminess on the finish.
Cellaring Potential: Now until 2010
